Of summer and chocolate


Summer is a pretty weird season. It's supposed to start on 21st of june, yet schools are off way before, and workers don't get to drop everything 'till way after.

But whenever the routine you have during the year ends the days turn into a blur of long lazy hours and summer heat, time slowly passing by without the real notion of it, like the fluffly clouds near the blinding sun. What was put off due to lack of time finally gets done, and things like timetables or hurry or stress are pretty much put in a closet and forgotten along with coats and scarfs. Whether you choose to stay up all the night to see the dawn on a roof and sleep off the day, or get up to enjoy the whole path of the sun it's up to you, because really, it's summer.


Chocolate its not so summer-y, but it has the decadence that must be indulged in during long tea breaks which aren't really breaks because nothing needs to be done in the afternoon, and seriously, the moist and soft consistence of a big muffin is nothing short of amazing. Easy to bake, few things to wash, lots of crumbles and dirty fingers. What's not to like?



Double chocolate muffins;



  • 200 gr flour
  • 190 gr caster sugar
  • 1 tblsp yeast
  • 150 m semi skimmed milk
  • 2 eggs
  • 50 gr dark chocolate chips
  • 60 gr cocoa
  • 50 gr butter


Put all the dry ingredients (Flour, sugar, yeast, cocoa and chocolate chips) in a bowl, mix until combined. It doesn't have to be perfectly homogeneous.

In another bowl whisk together eggs, milk and melted butter.

Whisk together the two, not payting attention to lumps. Muffin dough is meant to be lumpy.

Pour the mixture in a muffin pan. This is the exact amount for 12 medium sized muffins.

Preheated oven at 180°, for about 20 minutes. If a toothpick is stuck in the middle of the muffin it has to come out clean.
